The Muddy Walter

This recipe came from my dad, Master Patissiere Walter Peters, and is the easiest/most delicious mud cake you can imagine! Minimum dishes, no room temp ingredients required, and no creaming butter/sugar together…


  • 360mL water, milk or coffee
  • 180g good quality chocolate eg Lindt
  • 300g salted butter
  • 300g sugar (white, raw or brown)
  • 300g plain wheat flour
  • 6g bicarb soda
  • 9g baking powder
  • 3 eggs


  1. Preheat oven to 160C (fan forced).
  2. Use butter to grease a leak-proof cake pan really well. The mix will be very runny.
  3. Warm the liquid in a saucepan on low-medium heat. Don’t make it hotter than required to melt ingredients.
  4. Add the butter and melt. Add chocolate and melt. Add sugar and melt.
  5. Sift in flour, bicarb and baking soda and mix well.
  6. Add eggs and mix well.
  7. Transfer to cake pan.
  8. Bake for 1 – 1 1/2 hours until no longer wet in the middle.
